Meal Prep Monday Recap: Mason Jar Spring Cobb Salad with Raspberry Basil Vinaigrette

As promised, Team OmniRest officially organized and executed lunch meal prep for the week. It is going to be a busy one, so taking time out on Sunday to make healthy, delicious lunches to fuel the day is a nice change from the “what to have for lunch” internal dialogue. As part of the meal prep education, Meal Prep Society wrote a “Beginners Guide to Meal Prep” which laid out the essentials and philosophy of meal prep. For any new joiners, this is a must read.


We went through a few of the meal prep blogs and found another great resource: Fit Foodie Finds. With most of these ingredients at home, Team OmniRest put together the Mason Jar Cobb Salad with Homemade Raspberry Basil Vinaigrette. It really was pretty easy and quick, excited to taste the final product for Monday’s Lunch. Check out below:

Mason Jar Spring Cobb Salad with Raspberry Basil Vinaigrette


For the Salad

  • 3 large chicken breasts (seasoned in salt, pepper, and garlic powder), grilled and diced
  • ½ large cucumber, finely diced
  • 3 medium-size tomatoes, finely diced
  • 3 hard-boiled eggs, chopped
  • ¾ cup fresh raspberries
  • 4 strips of bacon, crispy, finely diced
  • 4 large handfuls of fresh spinach

For the Raspberry Basil Vinaigrette

  • ¾ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dried basil
  • ½ cup fresh raspberries
  • 2 tablespoons honey
  • ¼ teaspoon salt


For the Raspberry Basil Vinaigrette

  1. Place all ingredients in a small food processor and process until raspberries are pureed. Set aside.



For the Salad

  1. First, place about 2-3 tablespoons raspberry vinaigrette into the bottom of your large mason jar.
  2. Then, add in about ¼ of your diced chicken and 2 large handfuls of spinach.
  3. Next, add in ¼ of your chopped hard-boiled eggs, ¼ of your vegetable mixture, and ¼ of your bacon mixture. Finish off with a few raspberries.
  4. Seal with lid and keep refrigerated for up to ⅘ days.
