Sunday Sauté: Paleo Grilled, Marinated London Broil with Grilled Vegetables

Good Morning Sunshines! As you begin the Sunday routine of morning coffee, rummaging through social media for the run down of last nights festivities, dinner might be the last thing on your mind.  A learned practice of attempting to live a healthy lifestyle is a bit of preparation and having tantalizing snacks waiting for the growls of hunger.

This recipe is an attempt to make being lazy or busy not an excuse to fire up the grill and eat something delicious tonight.

Grilled London Broil with Vegetables

Prep time: 5 minutes Cook time: 15-20 min

Ingredients for London Broil:

2-3 lb of London Broil

¼ cup of Liquid Aminos for soy sauce flavor

1 tablespoon of Minced Garlic

1 tablespoon of Sage

2 teaspoons of Cumin

Salt and Pepper, to taste

Red Pepper Flakes, as desired

Throw these bad boys in a Ziploc bag, put in the fridge to marinate for at least 2 hours.

Next up..Vegetables

1 bag of Brussel Sprouts, halved

1 yellow pepper, large pieces

1 red pepper, large pieces

½ yellow onion

1 tablespoon of EVOO

1 tablespoon lemon juice

Salt and Pepper, to taste

Be like Fabolous and throw it in the bag. Marinate in the fridge for at least 2 hours like your London Broil.

Time to Cook! Heat up the grill on medium/high heat. Let the veggies and London broil cook to your desired temperature. It took us about 15-20 minutes! Cut up, serve and enjoy!
